Caramel Sweet Potato Muffins

The coziest desserts always include some kind of caramel in my opinion. There’s just something about it that is so satisfying during the cooler months. Paired with another fall staple, sweet potatoes, and you have yourself the ideal muffin situation!

    Preheat the oven to 350° F. Line a muffin tin with paper liners.

    In a bowl, whisk together all wet ingredients, then fold in the dry.

    Add the batter evenly to the muffin pan, then set aside.

    Meanwhile, prepare the caramel.

    In a saucepan over medium low heat, whisk together all ingredients. Let it bubble and thicken, stirring occasionally until it is a thick consistency and golden brown color.

    Using half of the caramel, top each muffin with a dollop of caramel, then bake for 20 minutes until a toothpick comes out clean.

    Drizzle the warm muffins with the remaining caramel and enjoy!
