One Pan Smoky Sausage Gnocchi

This 20 minute dinner is what weeknight dreams are made of. Comforting, high in protein, and just so bloomin’ delicious!!

    Heat 1 tbsp olive oil in a frying pan over medium heat. Once hot, add the onion and cook for 1-2 mins until softened. De-skin your sausages, then add them into the pan and, using the back of a spoon or spatula, break them up into small pieces. Let everything cook together for 4-5 minutes, stirring occasionally.

    Add in the garlic, paprika, oregano, and tomato purée. Give everything a good stir and let cook for another minute. Pour in the tin of plum tomatoes and break up the tomatoes with the back of your spoon. Fill the empty tin halfway with water, and add this into the pan too.

    Season the sauce to taste, then add the gnocchi. Stir to coat the gnocchi evenly in the sauce and bring the mixture to the boil. Then, reduce the heat to a simmer and let bubble away for a few minutes until the gnocchi is cooked.

    Stir in the spinach. Once wilted, remove the pan from the heat and finish with a smother of Parmesan.
