Healthy Pumpkin Muffins
These are the best bake for a cosy morning & I can’t quite express how good they are. Pillowy soft centre and the tangy cream cheese layer is just PERFECTION.

Simply mix all of the ingredients together in a bowl, before transferring into your muffin liners.

Drop a spoonful of cream cheese onto each muffin, then carefully cover with the remaining mixture.

Add on your choc chips and pumpkin seeds and bake for 25 minutes at 180C.
Notes
These will store really well in an airtight container in the fridge for 3-5 days. I recommend microwaving for 20 seconds to warm before devouring again.
