Press liquid out of tofu block. Cut into cubes and air-fry at 400F for 20mins, shaking halfway (can also bake in the oven).

Chop veggies of choice. Add a tbsp of olive oil into a pan and set to medium heat. Once hot, add chopped veggies. Sauté for 5-6mins/until soft.

Cook noodles according to package, take off heat 2-3 mins before cook time is complete. Strain noodles.

Once everything is cooked, add tofu & noodles into the pan of veggies. Add Kashmiri curry sauce and mix!
