Carrot Cake Cookie Sandwiches with Cream Cheese Frosting

    Mix together dry and wet ingredients (except for carrots).

    Fold in dry ingredients into wet (dough will seem dry but once you fold in carrots, it will be easier to mix).

    Lastly, fold in grated carrots.

    Scoop spoonfuls of batter into hands and roll into ball.

    Place on greased baking sheet and press down to flatten to cookie shape.

    Bake 350F for 11-13 mins.

    Let cool completely, then make cream cheese frosting.

    Combine 1/2 block softened cream cheese, 4 tbsp softened butter and 1 1/2 c powdered sugar.

    Mix together then spread onto one side of each cookie, then press another cookie on top.


Notes

Make sure you buy regular long carrots to save yourself some time grating them.
