French Onion Soup
Who else is happy that it’s soup season?

Thinly slice 4-5 large onions and 2 garlic cloves.

Melt 3 tbsp butter in a soup pot.

Add onions, a pinch to salt and sugar, and caramelized until they’re browned.

Add 1/2 cup of wine to deglaze the pan and cook for a couple of minutes.

Sprinkle some flour over your onions and mix.

Pour in 8 cups of beef stock, bring to a boil, then simmer for 20-25 minutes, season with salt and pepper.

Toast a couple of slices of baguettes.

Pour your soup into ramekins, top with toasted baguette and cheese.

Broil in the oven just until the cheese is golden brown and bubbly.
