    Scramble your tofu into a bowl, using your hands. Add the rest of the ingredients listed under «tofu balls». Knead for a few minutes and form into balls. Add more flour if needed.

    Cook your rice according to package instructions.

    Fry your tofu balls in a non stick pan, or pop them in the oven, or an air fryer until golden and crisp on the outside. You can also add the broccoli into the oven/air fryer to cook it, or simply steam or fry it for a few minutes.

    Make the sauce by frying ginger, garlic, coriander, chili for a few minutes, add carrots (I use a peeler to get thin carrot spagetti strips) and chopped mushrooms. Fry for another 2 minutes before adding coconut milk vegetable broth powder and water.
