Heat the oil in a medium-large soup pot over medium heat.

Add the onions and saute for a minute.

Add the carrots, garlic and broccoli. Saute for 5-7 minutes until tender.

To the pot, add veggie broth, spices, herbs, beans and bring the soup to a boil.

Now blend half of the soup, leaving some texture and whole beans.

Add the lemon juice, zest, salt & pepper to taste. Enjoy!
