    Mix chia seeds and water. Let the mixture sit and thicken for 10 minutes.

    Add almond flour, cornstarch, water, and salt. Knead the dough well.

    Save 1/3 of the dough for the top layer.

    Roll out the dough between two sheets of parchment paper and place it in a pie dish.

    Mix chopped and peeled apples with lemon juice, sugar, cinnamon, nutmeg, and salt in a bowl.

    Melt vegan butter in a pan, add the apple mixture.

    Cook for 10 minutes until tender. Stir in cornstarch slurry (water mixed with cornstarch) and vanilla, then remove from heat once it’s thick.

    Preheat oven to 175°C (350°F).

    Fill the pie crust with the apple mixture and top with your pie design if choice.

    Bake for 40 minutes and enjoy with vanilla ice cream and coffee​·​
