Water-Based Salmon Recipe to Avoid Glycation

A delicious and easy recipe to avoid glycation in food, inspired by Eric Ripert's book Seafood Simple.

    Pour water into a medium saucepan and fill with mushrooms. Bring to a low boil and simmer with thyme, soy sauce, balsamic vinegar, mirin and salt.

    Add butter to sauce to finish it and then place the salmon filet into the sauce on med-low. Cover.

    The fish will be cooked through once it turns opaque in the center and will continue to cook once removed from heat.

    Serve with broccoli or radish sprouts.
