    Place kombu in a nabe pot (or any pot), cover with water and before it comes to a boil, remove the kombu. Add bonito flakes (either in a strainer or strain after this step) and bring to a boil for about 10 minutes. Remove bonito.

    Season with salt

    Add your veggies and meat and bring to a boil. Serve with ponzu when the meat is fully cooked.
