Chicken Caesar Flatbreads
Come rain or shine these beauties never fail! So easy but so hearty and delicious.

Slice the chicken into small uniformed bite-sized pieces then combine with the Caesar dressing, oil and seasoning in a large bowl. Thread the chicken onto 4 large skewers. You want the pieces to be touching/a little snug, but don’t cram them together.

Place a large griddle or regular pan over medium-high heat. Add the skewers & fry for around 10-12mins, flipping once, or until lightly charred on the outside and cooked right through the centre (timings will depend on the size of the chicken pieces). You can also cook these on the grill, just rub the grates with oil first. In all cases, the safe internal temp for chicken is 74C/165F.

Toss the lettuce in dressing then toss in parmesan. Load flatbreads with lettuce, bacon, chicken, croutons & drizzle more dressing if desired.
