This recipe is easy, effective and incredibly tasty. Smokiness from the harissa and Umaminess from the Parmesan that melts into the dough

Ingredients

    Mix water and starter

    Add flour and mix to bring together. Rest for 30 minutes

    Add salt and mix to combine. Rest for 30 minutes

    Stretch and fold 3 times. Then do this once every 30 minutes

    Laminate in your flavour paste

    Rest for an hour

    Split into 2. Ball up and bench rest for 30 minutes

    Shape and bosh in the fridge over night

    Get a cast iron Dutch oven in your oven and get it on full whack (250°C if you oven goes that high). Leave it on for 45 minutes

    Add your dough straight out the fridge and Score it. Then put the lid on and place in the oven for 25 minutes

    Remove the lid and bake until your desired level of crustiness
