This simple crumpet recipe is guaranteed to improve your weekend by 41%. And it is using food waste so everyone is a winner. I would also like to take this time to apologise for the use of ‘sourdough discard’ I feel uncomfortable.

Ingredients

Directions

  1. 1

Combine your flour, baking powder and salt.

  2. 2

Add the discard and water mixing as you go.

  3. 3

The batter should resemble double cream consistency.

  4. 4

    Rest for 15-30 minutes.

  5. 5

Grease your ring with butter and place in a frying pan.

  6. 6

Fill the ring with the batter until about 50% full.

  7. 7

Cook at a super low temp to avoid burning the bottom.

  8. 8

Cook until the batter starts to come away from the edges of the ring and the top has bubbled and slightly dried.

  9. 9

Take the ring off. Flip the crumpet until golden brown.

  10. 10

    Repeat.
