    Mix your water and yeast.

    Add flour and knead for 5 minutes.

    Cover and rest for 10 minutes.

    Add salt and knead for 5 more minutes and rest for 10 minutes.

    Should pass the window pane test.

    Room temp bulk for 5 hours.

  7. 7

    Ball up and rest for 4-5 hours at room temperature.

  8. 8

    Rest in the fridge for 24-48 hours.

  9. 9

    Rest at room temperature for 2-3 hours before cooking.

  10. 10

    Stretch it out.
