    Combine vinegar, water, salt and sugar in a pot and bring to a simmer to dissolve the salt and sugar.

    Pack your tomatoes into heatproof containers or jars.

    Pour hot brine over and allow to cool slightly before covering.

    Optionally, add chili flakes or other spices.

  5. 5

    Once cooled down, transfer to fridge.

    They are good to go after 4-5 days and will last for months in the fridge.
