4 Ingredient Queso
Queso is great on its own, but you can customize with your favourite toppings like chorizo, pico de galo and pickled onions.

Combine lemon juice and baking soda and allow it to fizz.

Add to a pot with milk and bring to a light simmer.

Stir in cheese and remove from heat.

Allow 5 minutes for it to melt, and then transfer contents to a blender or alternatively use an immersion blender.

Blend on high for 1 minute.

Store in a warm place until ready to use.
Notes
You can adjust the thickness of the sauce to your preference by using more or less cheese.
