Crispy Smashed Potato Salad

    To make the sauce, combine yogurt, mayo, cucumbers, red onion, lemon juice and dill. Season to taste with kosher salt and set aside in fridge.

    Boil potatoes in salted water for about 10 minutes or until soft enough to easily smash.

    Preheat oven to 450°F.

    Drizzle enough oil to coat bottom of pan and add potatoes, tossing them to coat in oil.

    Smash potatoes using a grill press, fork or with the bottom of a glass.

  6. 6

    Bake for 25 minutes, flipping halfway through until super crispy.

    Allow potatoes to cool, and then add to a bowl.

  8. 8

    Top with dollops of dressing and gently toss to combine.

  9. 9

    Garnish with more dill or fresh chives
