A classic Spanish soup with a little Thai twist.

Directions

    Place all the ingredients in a large mixing bowl and stir together.

    Optional but recommended: leave for an hour for the flavours to infuse throughout.

    Place in a blender and blend until smooth.

  4. 4

    Pass this through a sieve for a smoother soup.

  5. 5

    Rest in the fridge for about 30 minutes before serving.

  6. 6

    Top with coriander, crispy onions and chilli oil if you wish.
