Burrata Smashed Cucumber Salad

Smash a cucumber using a large cleaver or pestle until it breaks apart. Chop into small pieces then place in a sieve and stir through the flakey salt. Stand for 10 minutes to get rid of excess moisture.

Add the chopped cucumber and all other ingredients (except for the burrata) into a bowl and stir to combine.

To serve, spoon the cucumber onto a plate. Top with the burrata, and garnish with anything you like (I used sesame seeds, chilli flakes and coriander leaves). Devour immediately with toasted sourdough.
