Smash Banh Mi Tacos

This recipe is the shiz if you're looking for a taco hit but also craving banh mi.

    Mix the pork mince, lemongrass, coriander, garlic, fish sauce, soy sauce, oil and pepper together in a mixing bowl.

    Divide the mixture into 6-8 equal pieces.

    Use a fork to smoosh down a piece of mince onto a flour tortilla.

    Fry on a oiled and hot cast iron pan for 4 minutes or until brown (and almost charred).

  5. 5

    Flip and fry on the tortilla side for an additional 2 minutes until the tortilla starts becoming crispy.

    To assemble, top the meat side with carrots, cucumber, chilli, mayonnaise and coriander leaves (and paté if ya fancy).

    Fold and devour immediately!
