Everything Bagel Roti

A South Asian flatbread filled with a scallion + cream cheese mix, covered with everything bagel seasoning and gently fried till CRISPY.

Ingredients

For the cream cheese filling

For the roti/paratha

For the Everything Bagel seasoning

    Add the roti ingredients to a mixing bowl and stir until a shaggy dough form, then knead for about 8-10 minutes until smooth. Divide dough into 5 pieces then cover with neutral oil and set aside for at least 30 minutes.

    Mix together the ingredients on a medium size plate to make the Everything Bagel seasoning.

    Stir together cream cheese and scallions to make the cream cheese filling.

    Once the dough has rested, oil a work surface and a rolling pin, then roll out a piece of dough to a rough rectangle then stretch until thin (you should see your fingers through this). Brush over some oil, then spread over 1/5 of the cream cheese mix, then fold each side in to form a rectangle envelope. Press both sides of the roti onto the Everything Bagel seasoning to coat, then fry on medium heat for 3-4 minutes per side so the middle cooks through. Remove from heat and devour!
