    Cut king oyster mushrooms into thick, scallop-like pieces.

    Massage with olive oil, salt, pepper, and sweet paprika.

    Pan-fry in olive oil—2 minutes per side until golden.

    In the same pan, add butter (vegan butter), garlic, lemon juice, and green onions. Toss the mushrooms back in and cook until everything’s deliciously fragrant.
