Miso Coriander Dressing

My top tip for keeping your salads fresh when you’re serving them as part of a spread or packing up lunch boxes is to put the dressing at the bottom. This saves everything from going soggy! And this is an elite salad for batch cooking, so make this your next packed lunch.

    Blend all of the ingredients for the sauce in a high speed blender until smooth.

    Cook the soba noodles according to package instructions and run them under cold water to cool and stop them from sticking.

    Blanch the broccoli and defrost the edamame.

    Finely slice the chilli and spring onion.

    Layer the sauce at the bottom of the plate or tupperware if you are prepping your lunch boxes, and then later up the rest of the ingredients on top and finish with your favourite toppings and seaweed snacks.
