In Cyprus and Greece, we LOVE our frappe, and this is how to make it if you don’t have the little electric whisk (which is as much of a staple as a toaster in most Greek/ Cypriot households). Add the coffee, the sugar if using, and 2 big ice cubes to the jar along with about 2-3cm of water. Shake for a couple of minutes, quite vigorously, until it has made a big froth.

Pour it into a large glass and top with ice and as much milk as you like, or more water, or a bit of both.

As you drink, the froth will die down and turn into more coffee that you can drink. You need to drink this with a straw!
