Makaronia tou fournou (or pastitsio) is one of those dishes that gets made on a Sunday in Greek and Cypriot homes and is as comforting as it gets.

    This is my vegan version of the classic, with layers of creamy béchamel, a caramelised mushroom, walnut and tofu mince and the thick bucatini pasta. It all comes together to make the perfect bite :)
