Preheat the oven at 400F

Line a sheet pan with parchment paper. Add the squash and drizzle olive oil on top & a sprinkle of salt/pepper.

Bake for about 20 minutes

Cook the pasta according to the package instructions.

Heat a large over medium heat. Add in diced onion + spinach and sauté.

Once the squash is done cooking, add it to a blender + milk + tomatoes + spices. Blend until smooth

Add the squash mixture to the skillet with the onion and spinach

Add in the mozzarella and ricotta and stir until melted

Spray a 9x13 inch baking dish with nonstick spray.

Add in the pasta

Add the cheesy squash mixture and stir to coat all the pasta

Sprinkle bread crumbs on top

Bake at 400F for 25-30 minutes, until the top is crispy and the sauce is bubbling
