    Cook the potatoes in salted boiling water with thyme for 15 minutes.

    Blend well and filter the mix with a sieve.

    Put the mix in a thermo whip syphon and charge with 2 N2O cartridges.

    Serve it warm just by putting the syphon for 10 minutes in a pot with boiling water.

    Finish with red cabbage chips and powder.
