    Shave the carrots with a peeler. Put together in a bowl the lime juice, extra virgin olive oil, grated ginger, chilly and a pinch of salt. Add the carrots and leave to marinade for 10 mins.

    Plate up with a ring finishing with pickled red onions gel, olive oil caviar, wild fennel and Red vene cress.
