One Pot Broccoli Cheddar Pasta
A quick and easy meal that's perfect for the whole family, especially when you're on-the-go!

Chop up the broccoli stems, florets, half an onion, and the garlic.

In a large pot over medium heat, add olive oil until it covers the bottom of the pot, and 2 tbsp of butter.

Sauté chopped onion and broccoli stems for about 5-7 minutes until slightly softened. Add in broccoli florets, season, and then if needed you can add a couple more tbsp of butter and stir for 3 minutes.

Add in the pasta and stir to toast for 2 minutes. Add in the broth and bring up to a bubble. Continue to stir occasionally until the broth has absorbed and the pasta is cooked to your liking. Feel free to add more broth if needed.

Finish with grated cheddar cheese and stir to combine!
