Preheat pan for 5 minutes on MEDIUM HEAT.

Drop in a tablespoon or two of room temp water in to the hot pan. If the water “dances” on the pan’s surface, then it’s ready to accept your food. If the water doesn’t dance, no worries, heat the pan another minute and repeat the water test.

Wipe pan dry and pour in some oil.

Cook as usual. Refrain from adding butter to the preheated pan, as the butter will burn. Oil has a higher smoke point. Always add butter to a cold pan when beginning the cooking process.

Tip! If the oil gets gummy on the stainless pan and is hard to get clean, scrub with LIQUID @barkeepersfriend
