Red Velvet and Chocolate Cupcakes

Combine egg whites and sugar and put bowl over a saucepan with simmering water. Whisk regularly until sugar dissolves and mixture is thin.

Take out of saucepan and, using standmixer, whisk on high speed until stiff peak forms.

Add in soft butter bit by bit, whisking well in between.

Add vanilla and salt.

Microwave dark chocolate until melted, set aside to cool.

Warm double cream in microwave and pour over milk chocolate pieces. Leave to sit for 5mins covered. Then stir and set aside to cool.

In bowl add in all wet ingredients (except milk) and sugar, and mix well.

In separate bowl, mix all dry ingredients.

Then add dry ingredients mixture into wet ingredients mixture, mix until well combined.
