Iced Red Bean Matcha Latte
Currently on a matcha phase😅 tried out mango matcha latte and wasn’t a big fan, but this red bean matcha latte was good🍵
Ingredients
Red Bean Paste

Place one cup of red beans and plenty of water in saucepan, make sure beans are covered in water, and let it boil for 5mins.

Drain water, replace with more water and let it simmer for 1.5hrs (might need to top water up). after simmering, red beans should be soft and ‘squash-able’ lol!

Drain water, remove red beans from saucepan and clean saucepan. Add back red beans to saucepan and add 1 cup of sugar.

On medium heat, mix red beans and sugar until shiny, and reduce (not too much, still needs to be slightly loose). mash some of the red beans while doing this, or you can completely mash it.

Add ice to the matcha mixture.

Add 120ml of milk to the matcha mixture.
Notes
homemade red bean paste keeps for 3-4 days in an airtight container in fridge.
