Mini Brown Butter Banana Cupcakes With Cream Cheese Frosting

    Start by browning the butter. Place butter in a small saucepan over medium heat and cook until foamy. Continue cooking stirring occasionally until liquid starts to turn golden and brown bits start to form at the bottom of the pan. Remove from heat and allow to cool completely and come back to a solid state.

    Preheat the oven to 350°. Line a mini cupcake tray with liners and set to the side.

    To a large mixing bowl whisk together the flour, baking soda, cinnamon and salt.

    To a separate mixing bowl whisk together the solid but soft browned butter, granulated sugar, eggs, vanilla, plain yogurt and milk until combined. Pour the mixture into the flour and mix to combine.

    Fill the prepared cupcake tray and place in the preheated oven and bake for 12 minutes or until toothpick inserted in the center comes out clean. Remove from oven and allow to cool completely.

    Meanwhile place soft butter and cream cheese in the bowl of a stand mixer. Blend until combined. Add the powdered sugar and vanilla and blend until smooth and creamy.

    Pipe a small amount of frosting on each cooled cupcake and top with a banana chip.
