Place strawberries in a food processor and pulse several times until completely broken down. Pour into a small mixing bowl along with the maple syrup and chia seeds and mix to combine.

I used a silicone baking tray but an ice cube tray will work as well. Fill your tray with the strawberry mixture and place in the freezer until solid, about 4 hours.

Place chocolate chips in a bowl of a double boiler along with the coconut oil and place over medium heat until melted and smooth.

Remove strawberries from the freezer and dip each one in the melted chocolate then place on a drying rack and sprinkle with flaky salt. Return to the freezer and allow to set. Then serve as a sweet treat.

Store remaining Strawberry Bites in the freezer.
