Rosemary Smashed Crispy Potatoes

    Boil red small potatoes in salted water and a touch of vinegar until they’re easily pierced with a fork.

    Drain and let dry.

    Heat oven to 450F.

  4. 4

    Put the potatoes on a tray spaced apart.

  5. 5

    Mash each one with a fork twice like a criss cross pattern situation (smash, turn and smash).

  6. 6

    Brush with olive oil, sprinkle salt and pepper and lotsss of minced rosemary.

  7. 7

    Bake at 450F for 30 minutes.

  8. 8

    You can add parmesan the last few minutes if you want or fresh garlic a little before.
