Mediterranean Eggplant Dish

Delish Mediterranean eggplant dish with garlic, onion, and tomato paste.

    Slice eggplant thinly lengthwise, salt it well, and let it sit for a while.

    Preheat oven to 450°F.

    Add eggplant slices in 1 layer in a pan with a little olive oil at the bottom and pre-roast them at high heat (450) for 10 min or so while the mixture is cooking.

    Sauté onion, garlic, pepper, and jalapeño well.

    Add tomato paste and a little water (2 tbsp) so it’s not very dry.

    Add 1-2 tbsp of olive oil at the end.

    Remove pan from oven, lower heat to 350F, pour mixture over the eggplant so it covers them all, add a few fresh garlic halves/quarters and bake at 350 for another 40 min or so.

    In the last min, you can sprinkle some parmesan.


Notes

Alternatively, you can sauté them but find they use too much oil, so prebaking is healthier.
