    Saute onion, garlic, red pepper, and jalapeno in spices.

    Add fresh ginger and red curry paste for flavor.

    Add lentils, water, and coconut milk. Bring to boil and simmer for 20 minutes.

    Add greens and fresh lime juice at the end.

    For coconut rice, add rice and coconut milk in the Instant Pot and tap the rice button.
