Easy Frittata

As easy as scrambled eggs but looks fancier. Great & convenient for a group brunch because you can cut each slice like a pie so it’s easy to portion size.

    Sauté 1 onion and some garlic first with salt in olive oil.

    Add a bunch of mixed roasted leftover veggies (red pepper, potato, butternut squash, cauliflower), some jalapeño.

    Let it cook for a bit and then add 12 whisked eggs (about 2 per person).

    Top with goat cheese.

    Bake at 375F for 15 minutes.
