High Protein Chicken and Chorizo Bake
This is my high protein chicken and chorizo bake, low cost easy to make and an absolute crowd pleaser.

Preheat oven to 180°C.

Cook chicken in a pan with 1 tsp olive oil and 1 tbsp cajun seasoning for 5-7 minutes.

Cook pasta according to packaging.

Cook chorizo in the pan for 2-3 minutes, then add onions, pepper, garlic, red chilli, smoked paprika, and cajun seasoning. Cook for 5-7 minutes until softened.

Add chicken back to the pan, along with chopped tomatoes, cooked pasta, and season. Mix together.

Transfer the mixture to an oven-proof dish, sprinkle with grated cheese and torn mozzarella, and season. Drizzle with olive oil.

Bake in the oven at 180°C for 20-25 minutes until cheese is fully melted and serve.
