Creamy Tuscan Chicken

A classic one pan wonder, this recipe is pure comfort food that’s so easy to make and looks the part too.

    Add 1 tsp olive oil to the pan, add chicken thighs and 1 tsp paprika season well and cook off for 5-10 minutes until the skin is nice and crispy. Once cooked through remove and set aside.

    To the same pan add the onions, garlic, 1 tbsp mixed herbs and cook for 3-5 mins until softened. Once softened add dried tomatoes, chicken stock, single cream and 1 tsp dijon mustard season and mix together cooking for a few minutes.

    Add the fresh spinach to the pan and let it wilt down for 2-3 minutes. Add the cooked chicken back to the pan with all the juices and garnish with parmesan and fresh basil.
