Wolffish with Coca Cola Sauce and Mac and Cheese

A unique combination of grilled fish, barbecue sauce, and creamy mac n cheese.

    Fillet the fish as shown in this reel.

    Combine all BBQ sauce ingredients in a pot, bring to a boil, skim off the impurities and reduce by half. Strain and keep chilled.

    Make a roux, add the seasoning and incorporate the milk and cream. Fold in the cheese and add the pasta. Top off with some more grated cheese and bake until golden at 180C.

    Bake the fish head at 250C until the skin starts to blister, about 20 minutes and grill the fish fillets in the meantime. Serve the barbecue sauce in a Coke can and enjoy!
