Fillet the fish and skin as shown in this reel.

Dust the fish with flour, pan fry until golden on both sides and set aside.

Deglaze the pan with wine, add butter. Once the butter is foaming, add the remaining ingredients. Add the lemon wedges together with the parsley at the very end. Spoon generously over the skate wings and enjoy!!
