Spice up your day with my tasty harissa tofu and roasted vegetable bowl. Ready in just 30 minutes, it’s flavour packed, vegan and gluten free!

    Preheat the oven to 180 degrees c.

    In a mixing bowl, add the harissa paste, tofu, cauliflower and courgette. Coat the ingredients evenly with the paste.

    Place the ingredients onto a roasting tray and cook for 25 minutes until the cauliflower has a nice char.

    Cook the lentils according to the packet instructions.

  5. 5

    Assemble the bowl with the other ingredients and dress with extra virgin olive oil and lemon juice.
