    Preheat the oven to 200 degrees C. Coat the chopped sweet potato in paprika, onion powder, olive oil, salt and pepper. Roast in an oven proof dish for 25 minutes before adding the salmon fillet to the same dish. Coat the salmon in extra paprika, oil and salt. Cook for a further 15 minutes until the salmon is cooked.

    In a stockpot, cook for the kale for 2 minutes. Drain and set aside.

    Mix cooked quinoa with chopped parsley. Dress with extra virgin olive oil & lemon juice.
