Apple, Rum & Raisin Crumble

Classic apple but a little bit extra. I went for a wholemeal spelt flour for this and used dark brown sugar which is delicious with the rum.

    Preheat the oven to 180 fan setting.

    Place the sultanas in a saucepan with the rum and bring to a simmer. Allow to simmer for five minutes then switch off the heat cover the pan for 10 mins allowing the sultanas to plump up and absorb the rest of the rum

    Chop the apples into roughly centimetre pieces toss in a bowl with the sultanas, sugar, cinnamon and vanilla and add to your crumble.

    Combine the dry crumble ingredients in the same bowl and top the fruit. Bake for 1 hour. Serve with cream.
