    Grill the peas from frozen in a fine mesh sieve over an open flame.

    Add the peas to a bowl with salt, olive oil, chilli, chives, basil, and mint.

    Add the pickled tomatoes and a splash of their vinegar just before serving.

    Mix well and spoon over the broken burrata leaving the bread crumbs till the very last second - so they stay crunchy.
