Spatchcock, oil, and salt the chicken on both sides.

Cook to your desired doneness, I’m a 160/65c guy.

Use the drippings, a heaped spoon of Dijon mustard, and your favourite olives and brine to make a sauce.

The slaw was white cabbage, salt, sugar, msg, vinegar, and the best olive oil @littlegypsyfarms
