    Mix flour and water and let it sit for 30 mins so flour absorbs all the water

    Add starter and salt to the dough and mix well until combined. Let sit for 30 mins covered

    Do 3 sets of stretch and folds every 15 mins (covering dough in between)

    Do last 3 sets of stretch and folds every 30 mins (covering dough in between)

    Let dough bulk ferment until doubled

    Shape dough then let sit for 20 mins

    Shape again and leave in fridge overnight to proof

    Let Dutch oven preheat inside the oven at 500 for 1 hr

    Score bread and bake with lid on for 30 mins

  10. 10

    Remove lid and turn oven down to 475 and finish baking until you get the desired colored crust

  11. 11

    Wait 2 hours to slice
