Toasted Sandwich but make it Desi
I had some leftover yellow potato, and unsliced bread from the bunny chows we had yesterday, added some red onion, fresh green chilli, coriander and mozzarella.

To a pot on medium-high heat, add the jeera and mustard seeds, when they start to pop, add the onions, and curry leaves, and allow it to cook until the onions are translucent (do not brown as this will alter the color of the curry)

Add the garlic and chillies, cook for 30 seconds then add the turmeric and cook for another 30 seconds.

Add the potatoes and allow to cook, when the potatoes are ¾ of the way done, add the chopped tomato.

Once the potatoes have completely softened and the water has evaporated, stir in the butter, and chopped mint.

Garnish with coriander.
